Review by: LeslieSoup stretcher!Other reviews will tell you how to use these as salads, sides, snacks, even pizza crust. I use them primarily as a bean or vegetable soup "stretcher." I like a hearty, substantial soup. I add two or three handfuls to a Dutch oven-sized pot of watery soup and let it cook down with the beans. It doesn't change the flavor; if anything, it enhances the flavor. More nutrition, and more soup that stays in the spoon!

My past experience with other companies is that FD cauliflower and broccoli are reduced to dust by the time they arrive at my door. I combined FD cauliflower, broccoli, peas and scallions in a ziplock for a backpacking trip. Just added cool water, waited an hour or so, drained and added a packet of ranch dressing, bacon bits and sunflower kernels. Made a delicious and much-appreciated fresh-tasting "salad" amidst days of FD trail meals!

Review by: OnefriendtoanotherAmazingly Sweet!How does NBT do it? Our freeze dried cauliflower was perfect! Sweet, dry and crunchy for snacking out of the bag, and when cooked? Perfection! The pieces in this are on the smaller side. Don't expect big clusters of florets. But they sure pack a big punch of flavor. Beats frozen hands down! And fresh is hit or miss. With these you will always have great flavor, and they taste great straight, as a side or in soups. One of our favs!

I layer it on the bottom of a small baking dish, add NBT broccoli florets, turkey pepperoni, egg white, parmeasan cheese, some walden farms BBQ sauce and cheese and you have a low carb pizza! YUM!

Review by: Elainegreat!This cauliflower is terrific! I purchased a small bag and tried it out in a couple of dishes. Worked out very well. My only regret is that I didn't save the dust in the bottom of the bag; would've been perfect to use to make a cauliflower mash.

Easy to Prepare
- Use alone as a dry snack or add to veggie trail mixes.
- Use dry for a crunchy effect in salads and, while serving, cooked rice and cooked pasta.
- Add dry during the last 5-10 minutes of cooking soups and stews that have sufficient amounts of broth.
- For most other applications, hydrate by soaking for 5 to 10 minutes in a generous amount of cold or hot water (hot water works slightly better). Then drain.
Yield — 1 oz equals about 3 cups dry with very low moisture content.
Rehydration Ratio — 1 lb of freeze dried cauliflower, once rehydrated, equals approximately 15 lbs of fresh prepared cauliflower.
Storage — Best if used within 24 months of purchase. Store tightly sealed and minimize exposure to heat and humidity.
